Zucchini Ginger Cupcakes



Typical, Amber's first post is a not-so-healthy cake recipe ;)

These delicate, lightly spiced cupcakes are reminiscent of carrot cake. Grated zucchini makes them exceptionally moist.

  1. Love these cupcakes!! DELICIOUS! I will definitely make them again!. I might try substituting the honey with applesauce next time, as it is quite expensive here in Canada.
